The role of protein shifting with STM Microtec technology
In the realm of plant-based proteins, innovation has become essential. Proteins derived from legumes, grains, and oilseeds provide high-performance and sustainable alternatives to animal sources. However, unlocking their full potential requires an efficient, gentle, and targeted processing method. This is where the concept of protein shifting comes into play.
This approach involves ultrafine grinding and dynamic classification to separate and concentrate protein fractions from starch fractions. By doing so, it preserves the functional properties of the final product—such as emulsification, texture, and nutritional quality—while minimizing resource usage, energy consumption, and waste.
With over 50 years of experience in designing and manufacturing dry grinding, micronization, dosing, and classification systems, STM Microtec now offers practical and modular applications of this principle, ranging from laboratory trials to turnkey industrial lines.
Why Choose STM Microtec Technology for Protein Shifting?
- Produces flours and products with high protein concentrations, effectively separating the protein fraction from the starch fraction.
- Employs controlled and gentle processes that maintain the functional properties of proteins (emulsification, solubility, texture).
- Provides scalable and integrated solutions—from single machines to complete systems—along with feasibility testing, in-house laboratory services, and dedicated technical support.
- Enhances sustainability by reducing the use of water and chemical reagents, as well as lowering energy consumption through a dry processing method.
Practical Applications
Starting with raw materials such as fava beans, peas, lentils, rice, or sunflower seeds, the process includes a refining phase that breaks down cellular structures and separates starch granules from protein. A classifier mill produces an ultrafine flour, which is then separated into two fractions—one with high protein content and another richer in starch—through air classification. The result is a premium raw material suitable for plant-based burgers, dairy substitutes, functional ingredients, baby foods, and much more.
SAVE THE DATE – GULFOOD MANUFACTURING 2025
From November 4 to 6, 2025, STM Microtec will be featured at Gulfood Manufacturing in Dubai (Hall S2 – Stand D81) to showcase the latest milling and classification solutions for the alternative protein sector. This event presents an opportunity to see firsthand how STM Microtec technology can optimize protein shifting processes and enhance the yield and quality of your products.
